After yesterdays superb Chicken Enchilada results, I thought, why not take chicken around the world.
I will be posting recipes from, Asia, India, Hungary, Spain and last but not least, from Russia with love!
Today I will start with Asia
Chicken Lettuce Wraps
Serving Size: 2-3 lettuce wraps , 4 PointsPlus
4 chicken breasts, diced into small pieces
1 red pepper, diced
1/4 red onion, diced
1 head of iceberg lettuce
Chopped scallions, cilantro, and bean sprouts for garnish
1 tbsp canola oil
For stir fry sauce
2 garlic cloves, minced
2 tbsp Splenda sugar blend
4 tbsp low sodium soy sauce
2 tbsp rice wine vinegar
2 tbsp ketchup
1 tbsp lemon juice
1/8 tsp sesame oil
2 tsp Asian chili sauce
1/8 cup water
In a small bowl, combine all of the ingredients for the stir fry sauce together and whisk together well. Set aside 1/2 of the recipe to use as sauce with the chicken lettuce wraps.
Heat the olive oil in a large non stick pan or wok. Add the diced chicken, onions, peppers, and garlic and cook for 2-3 minutes. Add the remaining stir fry sauce and cook for an additional 5-7 minutes until sauce begins to thicken slightly and chicken is cooked through.
Serve in individual sections of lettuce, with fresh cilantro, bean sprouts, and scallions.
