Simple Saturday

Today was a very busy Saturday for me.  The hubby and I had lots of running around to do.  This mornings WW meeting in Pleasant Hill was another success.  We had about 40 members and Pam was awesome.  I can’t wait for her to bring her wand next week.

It was fairly late by the time I got home and the hubby still had things he needed to do.  I decided a nice quiet dinner alone would be perfect for me. 

I baked a Simple Salmon dish

Simple Salmon

Ingredients

  • 6 oz. Salmon (5 oz. of salmon is 7 PP)
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1 lemon
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • broccoli rabe or broccolini

Directions

Preheat oven to 375

Place salmon on baking sheet sprayed with PAM

Poke holes in the middle of the salmon and the ends and sprinkle with cayenne and garlic powder.  Juice 1/2 a lemon over salmon.

Brush 1/2 tablespoon of olive oil on the salmon and bake for 15 minutes

Put 1/2 tablespoon olive oil in frying pan and saute the minced garlic for about 30 seconds.  Add the broccoli rabe and 1/2 lemon juice and saute for 15 minutes

Remove salmon from oven and serve with the broccoli.
