Crunchy Chicken Bake – Italian Style


I had some leftover chicken breasts in the fridge and I had to come up with something to put the leftovers to good use. 

 I figured that was a nice way to relax on a sunny Sunday afternoon.  The hubby and one of the twins went to play golf so I had some time to myself.  With the iPod blaring oldies, I played in the kitchen and came up with this.

Crunchy Chicken Bake

Serves 4

  • 8 oz chopped cooked chicken
  • 1 can 14.5 oz stewed tomatoes, drained
  • ¼ cup chopped chives
  • ¼ cup Italian dressing
  • ½ cup shredded parmesan cheese
  • 40 fat-free seasoned croutons
  • Flat leaf parsley


Heat oven to 350°F.

In ungreased baking dish, layer chicken, tomatoes, chives and croutons.

Drizzle with Italian dressing.

Cover and bake for 20 minutes.

Uncover; top with cheese. Bake about 10 minutes longer or until hot and cheese is melted. Sprinkle with flat leaf parsley.

So, let your creative juices flow when you are in the kitchen.  You will be amazed at the results.
