English Muffin BST’s

There is nothing like the smell of bacon wafting through the kitchen.  Bacon is traditionally something that is served for breakfast.  Making bacon for dinner makes it taste even better.  I created this open-faced BST (Bacon, Spinach and Tomato) on an english muffin.  It’as also amazing what you can do with a Laughing Cow wedge.

English Muffin BST’s

Ingredients 

  • 1 English muffin, split and toasted
  • 2 slices tomato
  • Spinach leafs
  • 3 center cut bacon strips, cooked
  • 1 Queso Fresco Chipotle Laughing Cow Wedge
  • 1 tablespoon Chipotle Ranch Dressing

Directions

Preheat oven to broil

Place the toasted english muffins on a baking sheet.  Spread 1/2 tablespoon Chipotle Ranch Dressing on each slice.  Top each slice with spinach leafs, tomato slice, and 1 1/2 strips of bacon.  Broil for about 2 minutes.

Remove from broiler and place 1/2 Laughing Cow wedge on top of bacon and return to broiler for another minute or two. 



Don’t be afraid to create new dishes in your kitchen.  You never know what you will invent.

      Thanks for being one of my faithful followers. The Chipotle Ranch dressing is a bit spicy. Try dijonaisse instead.
