I bought a pork tenderloin the other day. I had to take a look in the pantry and fridge to see what ingredients I had in the kitchen to use with the tenderloin.
I decided to try a honey mustard crust and roast it at high heat.
Honey Mustard Pork Tenderloin
4 PP per 3 oz serving
- 1 lb pork tenderloin
- 1/8 cup honey mustard
- 1/8 cup dijonaisse
In a bowl combine the mustard and dijonaisse, rub all over the tenderloin and refrigerate.
Preheat to 450
Place pork loin in a shallow pan and roast for 10 minutes
Turn and roast another 10 minutes
Remove from the oven and let rest for 10 minutes. Slice.
I served mine with steamed spinach.
