Easter Brunch – Petite Stuffed Peppers

Want to impress your guests at your Easter or Spring brunch celebration?  Try stuffing mini peppers.  The choices are endless.  Here are two I created.  Each of the ones I created are approximately 1 to 2 PP (i’ts a guesstimate) .

Mini-stuffed Peppers

Ingredients

  • mini peppers, halved, seeded and rinsed
  • Laughing Cow light cheese (any flavor)
  • Eggs
  • Chicken Apple Sausage, pan fry (no oil)

Directions

Heat a pan to medium high heat.  Heat up the pepper, add 1/2 wedge Laughing Cow Cheese, add chopped up chicken apple sausage. 

Or

Scramble an egg in the microwave for 45 seconds, stuff 1/2 the egg in the pepper.  Serve with quartered chicken apple sausages.
