I have been so busy lately, and have been dreaming of a nice long vacation. Unfortunately, that won’t be happening in the distant future.
Well the good news is that it’s Friday and our weekend is jam-packed. I will not be posting anything on Saturday because the hubby and will be attending a wedding in the Napa Valley. We are looking forward to it.
I hope you enjoy this evening’s recipe.
6 PP per serving
- 1/4 cup hot pepper sauce
- 1/2 cup reduced fat sour cream
- 2 tablespoons honey apple butter
- 1/8 teaspoon paprika
- 1 lb boneless chicken breast
- 2 tablespoons canola oil
- 1 clove garlic, minced
In a medium bowl, mix together the hot pepper sauce, sour cream, and honey until smooth. Season with paprika. Place chicken breasts in the sauce to marinate. Cover and refrigerate for at least 2 hours.
Heat oil in a large skillet over medium heat. Add garlic and cook until fragrant. Place chicken breasts coated with marinade into the skillet, and cook until nicely browned on each side, and meat is cooked through, about 20 minutes.
I served mine with a baked potato and a strawberry spinach salad for additional PP.
