Sometimes our dinners just have to be a simple and quick meal. I just want to make sure it tastes great and is within my PP range. I heard that using a dry rub seals in the juices. So without grilling outdoors here is my version of barbecue.
Honey BBQ Chicken
6 PP per serving
- 2 boneless skinless chicken breasts
- 1/2 teaspoon paprika
- 1 teaspoon dried parsley flakes
- 2 teaspoons minced onions
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- BBQ sauce + 1 tablespoon honey
Season breast with salt. Combine paprika and next 4 ingredients (paprika through seasoned pepper). Rub paprika mixture over breast.
Preheat oven to 375.
Place chicken, breast on foil lined baking sheet. Cook for 15 to 20 minutes. Remove chicken from oven.
Bring the BBQ sauce and honey to a simmer over medium-low heat; for 15 minutes, stirring frequently. Brush breasts with sauce. Serve.
I served mine with veggies and 1 cup mashed potatoes for additional PP.
