I think that shrimp bacon and onions combined make a delicious pasta dish. Trust me, you won’t be disappointed. Just make sure you have it all in the right proportions.
In this dish, I am using shallots instead of a regular onion for a milder onion taste. The addition of lemon juice add the right amount of zest to appeal to your palate.
This is a testament that healthy food can taste good.
Bacon and Shrimp Pasta
7 PP for (1 cup cooked pasta and 2 oz shrimp (about 7) includes the PP for the sauce.
- Morton’s 50% less salt
- 1 package spaghetti
- 3 strips bacon, chopped
- 4 ounces medium peeled and deveined shrimp
- 1 shallot, chopped
- 2 cloves garlic , minced
- 1 tablespoon fresh lemon juice
In a large pot of boiling water, cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta, and return to pot.
While pasta is cooking, fry bacon in a large skillet over medium until browned, 6 to 8 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate.
Add shrimp, shallots, and garlic to skillet. Cook, stirring frequently, until shrimp are almost opaque, about 1 minute. Add some of the pasta water, and bring just to a boil.
Add shrimp mixture and lemon juice to pasta. Season with salt and pepper, and toss to combine. Add some of the pasta water to the shrimp and lemon juice. Serve pasta sprinkled with bacon.
