“Not-cho” Typical Nachos

I know everyone loves the flavors from South of the Border.  I know I do.  I am always looking for ways to make cooking fun, tasty and healthy.  This is one on those that I did my best to “healthify”.

Nachos in a Cup

Serves 2

8 PP per serving


  • 6 ounces lean ground beef (93/7)
  • 1/3 cup water
  • 1 tablespoon taco seasoning
  • Dash hot pepper sauce
  • 28 baked Tostitos scoops
  • 1/4 cup shredded reduced-fat Mexican cheese blend
  • 1/2 cup pico de gallo
  • Chopped cilantro

Add on’s sour cream and guacamole


In a small nonstick skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, taco seasoning and pepper sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat.

While the mixture is cooking, heat oven to 350 degrees.

Place the Tostitos scoop cups on a baking sheet.

Once the mixture is ready you can spoon it into Tostitos scoops.

Sprinkle with the cheddar cheese.

Cook in the oven until the cheese is melted.

Place each scoop cup on a platter and you can either add sour cream or guacamole on the side or add to each cup.
