Turkey Breast Panini

If you have been following my blog at all, and it being a Monday, you probably think I didn’t make this dish tonight.  And you are right.

Haha, I made it yesterday.  Other members of the house went out to eat this evening so I was on my own.  I actually ate a peanut butter sandwich.

Would you believe I actually never made a panini before.  I’ve had a few in the past and they are scrumptious.  I made mine with low-fat swiss cheese, and I must say it melted just right.  Nice and gooey.

Turkey Breast Panini

Serves 1

7 PP per serving

Ingredients

  • 2 slices of your favorite bread
  • 1 slice reduced fat swiss cheese
  • 1/4 cup shredded cabbage
  • 1 tablespoon light sour cream
  • 1 teaspoon ketchup
  • 1 tablespoon stone-ground mustard
  • 1 squeeze of lemon juice
  • 2 oz turkey breast
  • 1 teaspoon olive oil

Directions

Mix the cabbage with the sour cream, ketchup, mustard and lemon juice; set aside.

Preheat your frying pan to medium high. Put 1 teaspoon of the olive oil in the pan. Assemble one slice of bread with the swiss cheese and the cabbage mix and turkey breast. 

Place on the hot frying pan. Add the second slice of bread on top of the turkey breast.  Place another frying pan on top of the sandwich and press.

Carefully flip the sandwich and repeat. 

 I served mine with a freshly sliced pear.

Thank goodness Monday is almost over.

    1. I knew it was to good to be true. I guess I was lucky he made it twice in a row. He is not fond of cooking.
