Southern Chicken Sub


I gave it my best shot to make a remoulade sauce for my chicken sub.  I used yellow bell peppers, but I think if I used a red pepper and maybe a jalapeno pepper this would have come out spicier.  It was on the “sweeter” side because of the yellow pepper.  Either way, it was tasty and filling too.

Southern Chicken Sub

Serves 1

7 pp per serving


  • 2 tablespoons Fage 0% total yogurt
  • 1 teaspoon ketchup
  • 1 tablespoon chopped scallion
  • 1 teaspoon chopped parsley
  • 1 tablespoon sliced shallots
  • 2 teaspoons stone-ground mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sea salt
  • black pepper to taste
  • 1 sandwich roll
  • 1 teaspoon light butter
  • salad greens
  • 1.5 oz cooked chicken breast, chopped


Blend the yogurt, ketchup, scallions, parsley, shallots, mustard and lemon juice together.

Preheat oven to broil.

Spread the light butter on the insides of the sandwich roll and broil for 2 – 3 minutes.

Combine the chicken, and bell pepper with the sauce mixture.  Add the chicken.  Place the greens on the sandwich roll and top with the chicken mixture.

You can add sliced tomatoes for 0 PP.
