Honey Glazed Salmon

Happy Friday everyone.  For those of you that don’t know, I have been training for a 5k hosted by Weight Watchers.  The event is this Sunday.  It’s actually a “Walk” and not a run.  I probably will run and walk.  I am definitely looking forward to it.

I noticed that when I cook meals, I tend to get fixated on one thing.  Either a particular cuisine or a particular ingredient.  It seems honey has been in many of my dishes lately.  And I just love the way it will make your chicken or seafood glisten.  It also adds a nice sweet taste to your dish.

Honey Glazed Salmon

Serves 2

9 pp per serving

Ingredients

  • 2 salmon fillets (about 5 oz each)
  • 1 tablespoon honey
  • 1 teaspoon low sodium soy sauce
  • 1 teaspoon garlic powder
  • salt
  • pepper
  • 1 teaspoon olive oil

 

Directions

Season the fillets with salt and pepper. Brush each fillet with the olive oil. sprinkle with the garlic powder; set aside.

Preheat oven to 325.

Mix the honey and soy sauce in a small dish.  Brush the honey mixture on the fillets.

In a frying pan sear the salmon skin side up for about two minutes.  Move to a baking sheet and finish in the oven for about 20 minutes.

I served mine with rice pilaf and veggie mix.
