Peanut Butter Granola Squares

I was browsing though one of my many cookbooks and came across this granola recipe. Everyone will flip over these delicious snacks.  They are very easy to make.  I am sure they would freeze well.  You can pop them out of the freezer in the morning and by the time you arrive at work you will be ready for a nice cup of java, or tea with your homemade granola square.

Peanut butter Granola Squares

Yields 36 squares

3 PP per square


  • 1/2 cup reduced-fat creamy peanut butter
  • 1/3 cup honey
  • 1 egg
  • 2 tablespoons canola oil
  • 3 1/2 cups old-fashioned oats
  • 1/2 cup firmly packed brown sugar
  • 3/4 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup semi-sweet chocolate chips


Preheat oven to 350.

In a large bowl, beat the peanut butter, honey, egg, oil and vanilla until blended.  Add the oats, brown sugar and salt to the peanut butter mixture and mix well.

Stir in the chips.  (batter will be sticky).

Pour the mixture into a 13 x 9 in dish coated with non stick spray.

Bake for 15 minutes.  Cool on a wire rack.  Cut into squares.
