The Laughing Cow Alfredo


Oh My Goodness!  That is about all I can say about this evenings recipe.  I found this one on the Laughing Cow’s website.  For their version of this recipe click here.

I modified it just a tiny bit.  I have to tell you that even though the alfredo sauce was thin, it was not lacking in flavor at all.

The Laughing Cow Alfredo

Serves 4

7 PP per serving


one package of fettuccine noodles, cooked

  • ½ cups Skim Milk
  • 1/2 Tablespoon Parmesan Cheese, Grated
  • 1 clove garlic, minced
  • 1 teaspoon light butter
  • 3 wedges The Laughing Cow Light Creamy Swiss
  • pepper
  • parsley


Combine the milk, cheese, garlic, butter and Laughing Cow wedges in a pot over low heat until melted.

Pour 1/4 of the sauce over 2 ounces of cooked fettuccine and top with pepper and parsley.  I served mine with broccoli raab
