No Bake Oatmeal Cookies


I am going to my first Fitbloggin meetup tomorrow in Oakland.  I will be meeting some great bloggers, including the famous Danica from Danica’s Daily.  I signed up to bring a dessert.  I made these no-bake oatmeal cookies.  Here is the recipe.


  • 1/2 cup 2% milk
  • ¾ cup Splenda sugar Blend
  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons crunchy peanut butter
  • 1/2 cup butter
  • 3 cups rolled oats
  • 1 teaspoon vanilla extract


Wipe 1″ wide band of butter around the rim of a 3 quart pan to prevent boil-over.

Combine milk, sugar, cocoa, butter and peanut butter.  Stir and bring to boil over medium heat. Let boil for 1 1/2 minutes, do not stir.

Remove from heat.  Stir in oats and vanilla.  Stir until oats evenly distributed.

Drop by teaspoon onto waxed paper.  Cool.

Now here is my dilemma.  They are sticky and gooey.  What did I do wrong?  Do I bring them to the meetup tomorrow?

 If I don’t bring them, what do I do?  It’s a fitbloggin meet up.  I can’t just run to the store and buy a dessert.  And don’t suggest fruit.  Someone is already bringing a bowl of fruit!

Someone rescue me please!!!!

  1. Of course you bring them! They look healthy and delicious…Just bring napkins and a tube of wet ones!!
